Kofta Anda

Kofta Anda, after watching Shaheeen on YouTube

Ingredients:

Kofta

500g Mince / Ground Meat

1 Sliced Onion

2 Green Chillies

Handful fresh Coriander

1 tbs Garam Masala

1 tsp Red Chilli Powder

¼ tsp Turmeric

¼ tsp Garam Masala

½ tsp Coriander Powder

1 tsp Salt

2 tbs Vegetable Oil

½ cup Breadcrumbs/Ruskoline

Shorva (Soupy Masala)

250ml Vegetable Oil

1 chopped Onion

1 tbs Garlic Paste

1 large Tomato blitzed/pureed

1½ tsp Chilli Powder

½ tsp Turmeric

1 tsp Salt

100ml Water

4 tbs Yoghurt

Water to cover

¼ tsp Garam Masala

¼ tsp Coriander Powder

Six hard boiled Eggs

Handful Fresh Coriander

Method

1) Combine the first five Kofta ingredients, blitz.

2) Add remainder of Kofta ingredients, mix well with hands. Your hand will become oily, do not wash.

3) With oily hands, make Kofta Balls, set aside.

4) Fry Onions and Garlic Paste in the Oil, then add Tomato.

5) Combine the Shorva ingredients as far down list to Water, cook until Oil separates.

6) Stir in the Yoghurt, cook another ten minutes.

7) Add the Kofta, cook for ten minutes, then turn Kofta over cook for another ten.

8) Cover with Water, add remaining Spices then Eggs, cook for another ten minutes.

9) Garnish with Fresh Coriander, serve.
